Grilled Cheese & Mango Chutney: The tastiest snack
The easiest, tastiest snack ever - mango grilled cheese
This is a complete treat and is really best reserved for calories-are-no-object days. Although I could eat this on every day of the week, it's something I try to keep away from if my skinny jeans are too tight. Try being the operative word. It's too tasty to ignore for long.
Five minutes, tops
The length of time it takes to make this delicious snack will depend on the thickness of the bread and the amount of cheese you use (I use thin bread and lots of cheese). This is a simple variation on regular grilled cheese and yes, it's fried. It's the subtle taste of the olive oil, blending with the melted cheese, crunchy bread and delicious mango chutney that makes it so yummy. It's OK made under the broiler, but nothing like as special!
Convince yourself that it's healthy
I do. Cheese is protein and calcium, right? Bread is a very healthy food. Mango chutney is fruit, isn't it? And olive oil is supposed to have loads of healthy properties. There you are then - this is positively good for you. I drain off excess oil with paper towel and serve with greenery and maybe a sliced tomato and therefore successfully convince myself that this is great health food.

What you'll need
Per person:
- 2 slices bread
- Grated/shredded/sliced cheese
- 1 - 2 teaspoons mango chutney
- 1 - 2 teaspoons olive oil
How to make this quick, easy and delicious snack
- Heat the olive oil in a heavy cast iron skillet
- Spread the mango chutney evenly onto the surface of one of the bread slices
- Add the grated or sliced cheese covering the mango with the remaining slice of bread and press down lightly
- Fry in the olive oil on a medium / high heat, pressing from time to time with a spatula
- Flip the sandwich and fry on the other side
- Serve with greenery to convince yourself that it's healthy
I strongly recommend that you use a good quality pan. The base should be completely flat and the pan should retain the heat well, distributing it evenly throughout the surface.
Over the years,I've experimented with just about every make of mango chutney that has ever existed (I love the stuff). And these years of experimentation have shown me that the one you see below is absolutely the best.
We don't eat meat or fish so therefore cheese is an important part of our daily diet. We're also very busy people and often, a grilled cheese snack is the finest lunch imaginable.

Vegetarian or vegan?
It can all become very complicated. Many people who don't eat meat won't eat cheese either because often it contains an animal by product which is only created when the animal has been slaughtered.
To them, this is equivalent to eating meat because it has meant the destruction of an animal - and there are many people who don't eat meat because they are concerned with animal rights or welfare.
There are others who will have nothing to do with any animal products at all, even if acquiring those products does not (in theory) harm the animals. Milk - therefore butter, cheese and all dairy - is an example. They will not eat, for instance, honey, because it involves the use of a living creature.
But there are no rules. It's up to us all to find the diet we are comfortable with.
